This Copa goes for an austere style, with aromas that are more earthy than fruity, with a firm, tense, and charmingly rustic texture. And it works great on that logic. This is a light but athletic red – fiber rather than fat, if you prefer. Ideal to think about accompanying it with sausages – the famous sausages from southern Chile would be ideal here. This país comes from the San Ignacio de Palomares zone in Ránquil, in the Itata Valley, and from vineyards that are about 120 years old. The wine was aged for 18 months in barrels. Score – 92.
