Masataka Taketsuru, Japan’s first whisky maker, learned his craft in Scotland. He established his own distillery on the northern island of Hokkaido for its similarity to the Scottish climate. Yoichi Non-Peated has a bright fruitiness with a touch of smoke, with a slight salty tang. Perfect with Saba Shioyaki or Yakitori.
