Insolia is an historic and important indigenous Sicilian grape. Fermented and aged in stainless steel, this wine offers snappy citrus, pear, peach, honeysuckle and spice, with some underlying herbaceous complexity and a notable minerality on the finish. Pair it with sushi, shellfish, or a creamy white-bean-and-kale soup.
