The aromas remind me of old-fashioned apple varieties and mirabelles. Yes, this has the major crispness of this bone-dry category, but it also has so much depth and savory character from the lees, so that carries the acidity easily. Long, crisp and salty finish. From south-facing sites that are earl ripening in Cumieres. This is a field blend of the three main champagne grapes, but the other four varieties were recently added to the mix.
