From a range of sites of varied geology, this was fermented in open concrete vats with indigenous yeasts; élevage in French oak puncheons and hogsheads. From a cool year, there’s notable elegance to this, though the fruits are both red and black – dark cherry and plum, blackberry, raspberry – accented with a tarry, charry note, master stock spices, mint, cacao nibs and cracked earth and iron-like mineral notes.
