Named for the red-tailed hawks that fly above the vineyard protecting vines from starlings and other pests, this 100% Merlot is fermented using wild yeast. It was aged for 10 months in French oak barrels made by the renowned coopers of Tonnellerie Sirugue. An elegant, smooth wine with complex black fruit, cherry, cocoa, cassis and earth.
