This dark ruby colored Cabernet Sauvignon opens with a plum, black raspberry, black pepper, and oak bouquet with vanilla notes. On the palate, this full body wine is crisp and juicy with bright acidity. The flavor profile is a black raspberry, black licorice, dark chocolate, oak, and light black tea blend. I also noted dried herbs and cinnamon mixed in. On the finish, the dry tannins are on the slightly high side initially. They integrate once decanted then stick around before fading away. I would recommend pairing this Paso Cabernet Sauvignon with steak frites. Score – 89. (Joe Nelson, kenswineguide.com, Dec. 31, 2021)
