Poggio Civetta Governo All’Uso 2021

The governo method involves partially drying a portion of the fruit for use in the winemaking process, adding extra richness and mouthfeel. This blend of 70% Sangiovese with 20% Merlot and 5% apiece of Cabernet Sauvignon and Syrah will conjure fresh cherry, cherry preserves, currants and spice.
