This unfiltered sake is brewed using the ancient Bodaimoto method, which dates to the 14th century. This intricate process results in the sake’s well-balanced acidity and umami flavours, with rich, sweet marmalade and apple notes and a hint of sharpness on the finish. Serve chilled or warmed with seafood and cheeses.
