Pet-nat (a.k.a. méthode ancestrale) is the way sparkling wine originally was made. In this process, wine is bottled before it has completed its fermentation. Fermentation continues in the bottle, releasing CO2 and creating the bubbles. This floral wine shows snappy citrus and would be a wonderful sipper or an ideal match for your favourite finger foods.
