Cavino Historoots Assyrtiko 2024

Cavino’s ‘Historoots’ line is a celebration of classic Greek varieties made in a modern style. This Assyrtiko was fermented in stainless steel and aged for two months on the lees. It shows white floral tones, citrus fruit, and a refined saline character. Very well-made and balanced, with bright acidity and a long finish. Pair with seafood or salads.
