Goutte d’Argent Sauvignon Blanc 2022

To ferment this wine, winemaker Pascal Marty uses the same sake yeasts that are used in cold areas in the mountains of Japan. Marty is a member of the Sake Producers of Japan, and as such, he has the right to use those yeasts that work at very low temperatures, which he says helps maintain the aromas. This is not a particularly lush sauvignon, at least not on the nose. But on the palate, however, it’s full of sweet and salty flavors at the same time, which is strange, although it works very well here in a sauvignon that is frankly beyond the norm. Score – 94.
