The nose opens with saline, herbaceous aromas of crushed seashells and wild oregano, then turns toasty and umami with notes of sourdough bread and cultured butter. Lemon, toasted nuts and pineapple headline the palate, where the mouthfeel seems buttery and rich at first, but then gets cut through with a current of acid.
