Cave Spring Estate Brut Rosé Sparkling

This gamay-based rosé is a low-dosage Brut with a vibrant and savoury character. Delicate but lofty lees keep the fruit afloat on the palate that is marked by flavours of cranberry, cherry, lavender, thyme and chalky minerality. Pleasantly nervy with a mouthwatering, palpable tension. Versatile with food but suggested pairings include miso salmon carpaccio or deep-fried calamari. Tasted April 2024. Score – 91.
