San Silvestro Fossili Gavi di Gavi 2023

Made from Cortese grapes grown on fossil-rich hillsides surrounding the Ligurian Sea, this wine suggests floral blossoms, mineral, garden herbs and subtle apple. It’s racy with good poise and balance, a great mineral seam, and a superbly crisp finish. Pair with shrimp salad or pan-fried fish.
